How do you cook your eggs?

First I like to hatch the egg, then feed the chick for 16-20 weeks and then make fried chicken.

Eggs are, to me, about the most vile food imaginable. That said, my pullets have started to lay and I'm going to try make myself learn how to eat quiche or something similar, maybe.
 
Are we supposed to cook it one way?

I usually fry up a big ole cast iron pan full of assorted peppers and onions first. Usually lots of jalapenos, different color bell peppers, and anything else that's ready to be picked out of the garden. Then I scramble a bunch of eggs with butter and add some salt and pepper. I shred some sharp cheddar and eat it all in a tortilla. Add a little dried ground chipotle power on top and WOW! best breakfast tacos ever!

many, many ways....but I make a lot of egg casseroles (sausage, potatoes, onions, peppers, eggs & cheese) or quiche. Every day for breakfast I have a fried egg with toast.
 
OMG I tried shirred eggs this morning and OH SO GOOD and easy too. Just butter a custard cup or ramkin, crack an egg in it, sprinkle with freshly cracked pepper, salt and fresh or dried herbs, (I used dried basil this morning) add a sprinkle of cheese, any kind will do and then pour on about a tsp. of cream. Bake at 350 degrees for 10 to 12 min. YUMMMMMM
 
I have my whole family hooked on "egg in the middle." As described earlier, hole in bread (buttered first), then brown both pieces side in nonstick skillet, turn over, and crack an egg in the middle and cook to your liking, and viola -- Egg in the middle, Buckeye egg, Eggs in basket, etc. What ever it is you call them, it is our go to if we are home late and lacking something quick to throw together. Put a salad with it and it is dinner. Or, just have two, sometimes for the four of us I make eight egg in the middles and that is it. Makes my mouth water just to think of it now, I want one! You have to have real butter and I prefer white to wheat bread, but will use any including Rye in a pinch.

Edited to add: My mom used to make these, and anyone who comes to breakfast at our house often has been treated to these, I love that it reminds me of my mom's special just for kids foods. Also, I love eggs any way they come, prefer them to meat!

Also, another fun thing my mom used to do it, mix eggs, milk, cinnamon, salt like you would for a french toast. But take the bread tear it into many small pieces (bite size) and mix in crisped bacon torn into bits and then fry it up like french toast, turning over and over til it is all firm and brown. Serve with syrup. We called it "eggy toast." Another one of my mom and dad's favorite breakfast foods for lunch or dinner too!

We are egg lovers also. My favorite egg dish is what my grandma called "peppers and eggs". (I use one small/medium pepper and three eggs per person) You slice and saute green peppers in olive oil, then beat up the eggs (add a little salt and pepper) and pour them on. Let them set a bit then stir them around. Get a nice crusty Italian loaf and cut hand-sized pieces. Pull the soft bread from inside and replace it with the peppers and eggs. You can add a little parmesan cheese to this too. I love anytime but it is great with a simple romaine salad with tomatoes and an oil and vinegar dressing.

My second favorite is one that I got from a vegetarian cookbook years ago. It is a casserole with a base of mashed potatoes (leftover or instant are fine) spread into a 9" x 13" dish. Make depressions in it (2 eggs/person) for as many as you need. Make an onion white sauce and pour over the eggs. Bake at 350 for 20 mins or till eggs are set, then top with cheddar cheese. Bake 5 min longer. Delicious.
