I have my whole family hooked on "egg in the middle." As described earlier, hole in bread (buttered first), then brown both pieces side in nonstick skillet, turn over, and crack an egg in the middle and cook to your liking, and viola -- Egg in the middle, Buckeye egg, Eggs in basket, etc. What ever it is you call them, it is our go to if we are home late and lacking something quick to throw together. Put a salad with it and it is dinner. Or, just have two, sometimes for the four of us I make eight egg in the middles and that is it. Makes my mouth water just to think of it now, I want one! You have to have real butter and I prefer white to wheat bread, but will use any including Rye in a pinch.
Edited to add: My mom used to make these, and anyone who comes to breakfast at our house often has been treated to these, I love that it reminds me of my mom's special just for kids foods. Also, I love eggs any way they come, prefer them to meat!
Also, another fun thing my mom used to do it, mix eggs, milk, cinnamon, salt like you would for a french toast. But take the bread tear it into many small pieces (bite size) and mix in crisped bacon torn into bits and then fry it up like french toast, turning over and over til it is all firm and brown. Serve with syrup. We called it "eggy toast." Another one of my mom and dad's favorite breakfast foods for lunch or dinner too!
