Me and my mom argue how you can tell if a hen can lay an egg I always thought it was based on age, but she thinks because they are so big they should be laying.

Note:they still have 2-3 months before thee old enough to lay

Well.. What breed do you have? That will determine how long before they lay. Some ways for determining good egg layers are based on pelvic widths, and other methods examining the chickens by hands on.. I personally don't know any method other than just knowing roughly when they will lay and just checking. Size is not a factor for determining when they should be laying based on the breeds I raise. Bigger (hipped) hens do have an easier time tho haha

Cornish rocks are considered meat birds and are generally a cross of 2 breeds. They are generally slaughtered at 2 months old because they are bred to grow fast and plump in a short time. If they will lay eggs or not is outta my knowledge.. I don't see why they won't but would be better off just buying more of the breed.

Yes Cornish Rocks will lay eggs, if they don't grow so large that they can't function.
Some lines are better at getting old enough to lay than others as they are mostly bred a meat chicken to get huge then slaughtered before they are too large to walk.
