Nice and rare, no sauce please?

Every once in a while I do like crumbled Bleu or Feta on top of my steak.

Once in a blue moon I make a carmelized onion/crimini/portabella ragu that I adore on top of a steak.

It is. I first had it at some hoity toity restaurant my husband took me to. That is a story in itself!

Anyway, you can also saute the cheese in a little butter and soften it and spread it over the steak while it is still sizzling.

Ex FIL used to gt a lb of butter to room temp, then use a food processor to blend in chives and a little garlic...then refidgerate again till firm, and put a pat of his "steak butter" on any steak...that was GOOD
