How do you open a quail egg without getting chips

I was watching a Martha stuart show several months ago and she was using a serrated knife to open quail eggs. I tried it and it does work well but I still get chips in the mix. Does anyone have a way of opening the eggs chip free?

this is what i use works great
 
I have quail eggs with lunch every day, I just crack the pointy end with the back of a knife and peel the top off. Only get one shell bit in on occasion. Usually crack 5 or so.
 
I love the egg scissors. I saw a video on using them and the guy says you should open the wider end of the egg. I forget if the reason was to keep the yolk intact more often or that it lessens the shell fragments. In either case, I'll have to change my technique.

I watched the video of the woman using the quail egg scissors on utube, awesome. I ordered a pair on ebay. Thanks for all the replies.
