First off, I have a super nice husband that lets me use all of his nice lumber to build things I don't absolutely need. So I made him put shelves in the pantry, and when I filled those, I made him put more, and then I didn't have room for all of my new bigger jars and third canner. So he built me a little area out in the shed that the kids play in. I can for about 3 months solid, then I'm done for the year, so I don't really see any reason to keep a room full of jars in the house that will need to be washed and sanitized anyways.
So I do the same as jwg. I keep all of the boxes and put the jars back in and put them on the shelves in the shed. Then I keep all of my lids in a plastic bucket with a lid, and I always put a bag of rice in there to help keep the moisture off and keep them from rusting. I do keep all the new seals inside in their boxes in the pantry, I'm always afraid they will get too hot outside. I just asked the other day if he could add more shelves because I just raided his mom's sauna bath where she kept all of her canning jars that she no longer uses. JACKPOT!
