We do not have a lot of counter space, so our eggs go straight into the fridge. I don't wash them, though I will wipe or gently buff off visible poop. I only recently started keeping chickens, but I tend to do things the way my Mama did them when I was growing up.

do you mark the eggs so you know when then should go in the fridge? last year was our first year and we did not have as many layers as this year. Right now all the hens are laying everyday so we get 7 eggs daily. I wont have room in my fridge and so I was going to put a basket on the table. I am worried I wont know which eggs are older. How do you guys do it?

I put the date on the wide end of the egg when I bring it inside. It goes in the basket until the basket starts getting full or I know a customer will be coming for some soon. I pull out the oldest eggs in multiples of 6 or 12 (depending on how many per carton I plan to store), the ones I'm storing get washed, dried and packaged and put in the fridge and the rest go back in the basket.

thanks for the input. I know it is safe to have eggs out but old habits die hard. I lived in europe for a little while and they looked at me funny when I asked where the eggs where and they are on the shelf in the middle of the store. LOL.
Now I have a reason to have my nice basket out.

I have a couple cartons on the counter, I fill them up in a certain order so I know the oldest from the newest.
Keeping them in a bowl or basket is cute but I prefer to know at a glance which are the oldest.
I usually sell or use them before I get more than 2 cartons full, but I only have 8 hens.
If I get 2 cartons full, I start calling customers on my list and they are usually sold, pronto.
