How does everyone clean their eggs?

I just read in a book called "Keeping Chickens" by Jeremy Hobson & C Lewis " That it has been found that Marans eggs remain free from Salmonella infection possibly because the pores are small
 
I rinse with cold water, let dry, then into recycled egg cartons they go. Husband rinses again before using, but I don't.

I use an organic enzyme wash. At the height of egg season, I get 140 eggs a day, and I sell them to a restaurant. Washing is not an option. Poop, dirt - but the worst offender is that often eggs get broken, then they get eaten. Any eggs in the same nest then get yolk on them, and everything sticks to the yolk! I might get 80% clean eggs that don't appear to have issues, but the other 20% - it can be egg yolk, dirt, poop, especially on wet days when they come into the nest with muddy feet.

If anyone sells commercial, read the laws in your state, the FDA does have some requirements on sizing, candling and washing, and your state may or may not require you to follow them in order to get a license to sell eggs.
