How long can eggs be kept before pickling?

Can eggs (specifically quail eggs) be kept for 3 weeks in the fridge before pickling?

I only pickle chicken eggs but can tell you that they peel easier at three weeks than they do fresh. Easily they can go 6wks in fridge.

But if you bring your water to a rolling boil first and then place the eggs in....they are really easy to peel.
