How long should i wit to boil fresh eggs?

Wow! I've always read that real fresh eggs were impossible to peel. I do the hot water start then ice bath and never have trouble but that's with store bought eggs. Thanks for the help.

Hi. :frow

I also do hot water start regardless of egg temp and cold finish. My tap is pretty cold so I just keep it fresh with no ice.

Not all, but almost all peel with ease and no tearing.

I used to try salt or vinegar and had varied results with zero consistency. But this works, cost nothing extra, and is environmentally friendly to boot. :pop

I am curious to try steaming though. :)

Being an old hen myself, and having boiled enough eggs to *figure this out*, I think the most important parts of doing eggs is an ICE BATH right after... and peeling the eggs within 10-15 minutes after the ice bath. The hot eggs into the cold water creates a STEAM LAYER between the egg and shell, which then lets the shell slip right off.

I have an Instant Pot digital pressure cooker. I "boil" my eggs in that. Just put them in rack in pot, add 1 cup water, put cover on and close valve, set on manual for 5 minutes, then wait 5 minutes and release pressure, open pot and put in cold water. Takes about 15 minutes and come out perfect everytime.
