How long should quail "rest" in fridge?

I butchered two of my extra male coturnix today as they were harassing the hens and just causing problems. I've never processed quail, but after a quick tutorial, I did pretty well I think. The question is: how long do they need to "rest" in the fridge before I cook them?

We rest ours for three days...seems to work well.
