How long til good eggs?

Two hens (coturnix browns) just started laying. I have them in groups of 4 hens to 1 male. One hen's eggs were 6.3, 8.5, 8.5 grams. The other 6.5 and 12.6 grams. How long does it usually take for the eggs to stabilize in size, what size would be acceptable, And how long until I can select eggs to incubate?

Wait about 2 weeks after they have been laying and mating for optimum fertility.

Thanks, will the size become consistent or will it fluctuate?

As the females age and get their egg laying machines in gear, the egg sizes will be more consistent and more frequent. Fertility will also increase with age.
