How Many Eggs Did You Get Today?

Four eggs yesterday, and six today! Martha's blue yesterday, but she took a personal leave day today. Edna's green both days, Elsie's green today. Two browns yesterday, four today (including another random pullet egg - 🤔 wonder whose?) so all but one of the brown-egg girls contributed today.

After getting rain-soaked continuously through January (another atmospheric river yesterday into this morning), their yard and the covered run were a muddy, soggy mess, (their many excavated craters do NOT help) so I made good use of our rainless afternoon and dug out the top poopy layer in the run & replaced it with buckets of fresh wood chips, then spread a lot more out in the open run.

The 8 girls were much in favor of all this and excitedly "helped" spread the new wood chip piles around for me, availing themselves of a fresh crop of grassy weeds, worms and other tasty critters that came in from the big chip pile. Hard to work with so many busy chicken bodies in my way, but so much fun having them so close to me and having such a good time! They were very conversational and I joined in as best I could (no doubt my chicken-accent is dreadful but they still banter with me).🥰

That’s awesome 😊 my stall cleaners do a fabulous job of spreading straw around for me, mind you I have asked they try to keep the straw in the stalls and not in the aisle! I am very surprised I don’t find eggs in the horses stalls!
 
I had the same thing happen to me a couple days ago. It broke in the egg carton when I attempted to take it out. Thumb when right through the shell. I was able to salvage most of it.
I got one like that yesterday! From one of my green egg layers, lit was slightly brittle and I dented it while collecting it. The chooks can have it for breakfast tomorrow (today? Gosh it’s almost 1am!).

Here you go!
  • 6 large eggs
  • 1 ½ tablespoons half-and-half
  • 4 ounces
  • bacon (about 4 slices), cut crosswise into 1/4-inch pieces
  • ½ pound Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
  • 1 ½ ounces cheddar cheese, cut into 1/4-inch cubes (about 1/3 cup)
  • 1 small shallot, sliced thin on the bias
  • Whisk eggs, half-and-half, 1/4 tsp. salt, and 1/8 tsp. pepper until well combined and set eggs aside.
  • Fry bacon in 10-inch nonstick ovensafe skillet over medium heat until crisp.about 10 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate; pour off all but 1 tbsp of bacon fat. Add potatoes to skillet and cook until golden brown and tender.
  • Stir cheddar, scallions, and bacon into eggs; add egg mixture to skillet and cook, using spatula to stir and scrape bottom of skillet, until large curds form. Shake skillet to distribute eggs evenly; cook without stirring for 30 seconds to let bottom set.
  • Slide skillet under broiler and broil until frittata has risen and surface is puffed and spotty brown.
  • Take out, let sit for about 5 minutes and then serve.

The recipe is from Cooksillustrated.com and is supposed to serve 2. It originally called for 2 scallions but I substituted the shallot - personal preference.This is easily doubled (it usually is at our house) because it's also good cold and when cut in small portions make for a lovely low-carb snack.
