How Many Eggs Did You Get Today?

I prefer about 10 days old for boiling, otherwise the shell is too hard to remove.
True this! It's why I date my eggs the day they are laid. I set some aside for two weeks and hard-cook them for DH, he likes one a day with his breakfast. They peel really slick and easy.

I have been steaming mine in a steamer basket set in a pot with an inch or two of boiling water. 15-17 minutes (depending on how hard you like them, I prefer mine to be pretty solid) once the water starts boiling, then into cold water to cool. I find that they peel even better than boiling, and it doesn’t matter how old the eggs are. Might be worth a try if you don’t want to wait 10 days :)
 
I start my eggs at room temperature and put them in boiling water. You're right, the water does not need to cover the eggs. Cover, turn off the burner, set timer for 12 minutes. Remove from pan, place eggs in ice water to stop cooking. When cool, refrigerate. You can peel before refrigerating or not. If you do, place in a zippy bag. Using this method you do not get that sulfurous green coating on the yolk.
