I have really been enjoying making Flan. This is probably the wrong place, except that we were talking about using up eggs.
You make some carmelized sugar, just melt it in a pan, put it in your custard dishes, and while it sits there, combine 3 large eggs, 1 1/2 cup milk, 1 teasp vanilla, and 1/3 cup sugar. Combine this, don't make it frothy, and put it on top of your sugar, put it in a 8 x 8 pan with 1 inch of water in it in the oven at 325.
Cook about 45 minutes or a little more.
I just had a rather extensive surgery and I am queasy and this tastes really good and uses up eggs.
Oh I use about 1/3 cup sugar to carmelize sugar.
Of course you can just make custard which is also good. Or rice pudding.
