How many eggs minimum daily for a roadside farm stand?

I have a similar production at the moment. I've considered a roadside stand. What I'd do is pick a day or two of the week where I know I'll have a lot of eggs. Save up for a week, then sell them all on one or two days. Put a large FRESH EGGS TODAY sign out when they're ready to sell. If you do it on the same day(s) every week, customers will quickly expect it and plan to stop and see you. When they see the sign, they know the eggs are available, and don't have to stop and see (which really would tick me off, personally, stopping for eggs when there's no eggs). Also it's less of a pain/time suck for you, because you only have to be on call the day(s) you sell, and those days you would do a lot of condensed business. Half the time commitment for the same amount of business.

What do you think of this idea: M-F I could sell hot coffee and a pastry for $5 for contractors and farmers heading to work in the morning, and weekends, there will be enough eggs (10-20 dozen) so enough customers will each be able to buy some.
Might have to check if there's different regulations for prepared food/beverage. Otherwise saving up eggs for weekend sounds good, to increase availability on sales days.
 
Around here, the people who buy bundles of firewood do so to put on their campfire that day or that weekend. They do not expect to store it to season. So, it needs to be seasoned enough to burn well.

It doesn't need to be completely seasoned like for a fireplace or wood stove to avoid creosote build up in a chimney.

Selling pastries like that would be illegal in my state unless you happen to have a commercial kitchen and other things like properly labeling (that is easy but very picky - size of font, what information to include, and such). Other states may differ - some have a version of "cottage industry" exceptions.
 
Can firewood be sold just after cutting? Do customers expect it to be ready to burn right after purchase?
If I were to buy firewood by the bundle, I'd expect to be able to burn it right away.

If you only have enough eggs for selling a few days a week, maybe make a sign to that effect. "Fresh eggs! Available Mondays and Thursdays." And then be sure you have them available those days, as that would be akin to advertising your store hours.

A place near me has a sign by the road that says, "Fresh eggs." Sometimes (often, this time of year), they have an addition sign on the top that says, "Fresh out." Easy enough to put on/take off.
