I have a similar production at the moment. I've considered a roadside stand. What I'd do is pick a day or two of the week where I know I'll have a lot of eggs. Save up for a week, then sell them all on one or two days. Put a large FRESH EGGS TODAY sign out when they're ready to sell. If you do it on the same day(s) every week, customers will quickly expect it and plan to stop and see you. When they see the sign, they know the eggs are available, and don't have to stop and see (which really would tick me off, personally, stopping for eggs when there's no eggs). Also it's less of a pain/time suck for you, because you only have to be on call the day(s) you sell, and those days you would do a lot of condensed business. Half the time commitment for the same amount of business.
