How many wine makers do we have here?

Time to unearth my dandelion wine from last April. I know the alcohol content is through the roof. Should be interesting. Funny the difference between this year and last. There are no dandelions blooming yet.

Great info, got all of it laying around the farm. This was my next endeavor....My persimmon tree here in the northwest is a Fuyu. Looks like this. I took this picture off of the internet, mine aren't ripe yet....I am really enjoying this thread.....thanks to ya'll.....

We did persimmon wine a while back and it was sooooooooo good !!!!!!!
 
A few other questions...

Has anyone tried apple wine? If so, how did you like it?

What do you all use to mash your fruit?

Alcohol in wine can't go above 16-18% max without fortification. That's pretty high though (you won't need to drink much if yours is that high!)!
 
Question........... How is everyone's distillery set up? We have a cheap-o/deap-o set up.

Um, distillery? Are you making distilled spirits (brandy, vodka etc) or making wine?

We have a cellar and a garage for the winemaking. Fermentation in carboys - we have about 60 gallon capacity right now.
 
I put in my sugar and yeast last night. I will filter in a couple days and put in the distillery. And now we wait. :drool



That's really early for filtering? You don't normally do that until the fermentation has finished.


I use another recipe that an older man in my town uses and it is always great!
