How old are fresh hatching eggs?

I am getting some very good answers.
It makes me feel better about my questioning the dates on the eggs and getting the astonishing answer that "8 days is pretty darn fresh!" Which actually with shipping was more like 11 days, a rest for about 12 hours and then in the bator.

I have actually had eggs sit here for about 4 weeks in the house, 75 degrees with the AC going, never turned except to look at the egg color so maybe touched a few times a week, set them and they hatched. I was totally amazed! I have not ever tried that again and do not plan to but I thought that was a freaking miracle in itself!

I still never tilt my own egg trays while eggs are waiting for the bator, up to a week or 2 and I get great hatches. About 99%. However, I do tip my friends' eggs as she asked me to and will do as she wants for her eggs. She actually does hers at home by flipping them completely over each day but I just tilt one side in the morning and change it in the evening. She is thrilled she is getting any chicks!
