how to keep cornstarch pudding from separating

You can follow your recipe, as usual, but while milk and sugar (and possibly a pinch of salt) are heating, beat a room temperature egg in a small bowl. Ladle out some of heated milk mixture into the small bowl with the egg, beat, then add the egg mixture back to the milk and scald for a minute or two, then carry on as usual with the recipe. If you're still getting some separation, you could up it to as many as four eggs, and I would guess this depends largely on the type of milk you're using (whole, 2%, 1%, skim, cow/goat, etc.).
