How to Make Home made Deli Meats?

I do make my own Italian peperoni in the long traditional sticks and a few select Salami recipes from the old country.
 
Found it:

Beef Salami
2 lbs ground beef
6 drops Liquid Smoke
1/2 tsp pepper
1/2 tsp mustard seed
1/2 tsp coriander seed
1/2 tsp minced garlic
3 Tbsp Morton's TenderQuick salt

Combine all ingredients and shape into 2 rolls < Mom's instructions: Use your hands

Wrap in foil, tie ends with string and refrigerate 24hrs
Place rolls in a pan, cover with water, bring to a boil & boil 1hr.
Remove from the pan, poke holes in the foil & let drain well.
Remove foil, rewrap in foil or plastic wrap & refrigerate.
