Ok, I know this SHOULD be the easy part, but how, exactly do you remove the old water heater thermostat from the old water heater?
When I started to do it myself, my DH gave some long-winded story

about how difficult it is and how you need special tools and so forth.

I think he was just being avoidant, personally. So can you please confirm or dispel the myth? How hard is it anyway? Please help!!

PS - It's the only piece that's missing from the bator I'm making with my DD...Please help!

First, be Positive there is no power running to it. loosen the 2 screws holding the 2 wires to the thermostat. The thermostat is held to the W/H just with tension form the sheetmetal bracket that it rests in. you should be able to wiggle it twards the bottom of the W/h and it'll come off.

Thank you Daidohead for the advice. I'll be able to try it out on Monday. I'll post back here afterwards.
