the first sighn that your flock is eating eggs is you will have less eggs and the nest will be sticky from yolk, the other eggs in the nest might be sticky and dirty

how to stop it

first the easiest thing to do is to give them dried and crushed egg shell or oyster shells that you buy, that gives the hen extra calcium wich will make the shells harder the other thing you can do is hollow out an egg by poking one small hole in each end of the egg and blowing the yolk and whites out of the egg rince ouse the egg as best as you can and let it dry, then use hot glue and plug one hole and then use the other hole to fill the egg half way with either body soap, or dish soap. then plug the un pluged hole and put the
egg(s) in the nest you may need to do it a couple of times for it to work it always works for me. NO guarentees

good luck hope this helps, feel free to ask any questions

Another option, eat the offending chicken. :)
Periodically I have had the occasional chicken in the flock that ate eggs. I've always provided oyster shells for them. When the egg eater is caught she goes in the crock pot. Problem solved.
