The temperature here has been well below freezing here for the last few weeks and sometimes by the time I get out to collect eggs they have frozen. (Our girls tend to lay super early in the am, as we have a light in the coop. No desire to get up at 4am to collect them before they freeze!) Typically we keep our eggs on the kitchen counter, but I am wondering if the frozen eggs need to be treated differently. Do they need to stay in the refrigerator? Will they spoil or stay fresh for a shorter time if I let them thaw and stay on the counter? Many thanks!
