It really stinks and is a soft cheese which I think is wonderful when spread on pumpernickel. A little bit goes a long way.

My father picked up a Paul Prudome book when I was a kid. Within 10 years that book had 20 years of use under it. LOL. I have that book now... I LOVE Cajun food, and I REALLY want to go to NOLA someday. Probably in the winter. I don't know that I could handle the heat and humidity during the summer!

June is not too bad, but August is unbareble. Christmas is nice, lots going on and people dressed like they are from the 1700's-1800's wandering around the french quarter singing carols, amoung a whole lot more. Try googleing what is going on in NOLA and surrounds, in December and January. Good luck
