I also prefer pellets, it's easier for them to recover when it spills on the floor. Crumbles are just crumbled pellets, it's the same stuff, just a different form.
Some folks say their chickens refuse to eat pellets. If yours are hesitant, instead of crumbling them, try wetting them. Mine think it's a big treat to have pellets wetted with warm water, like oatmeal. I sometimes do this on cold mornings to make them happy.
Edited to add: I first read your title as "I accidently bought pullets..." and had to know more, wondering "Why should that be a problem? Most people want hens more than roosters, don't they?"
