I am hoping I can get some help which I am sure you all will. I have a friend who had a double masectomy yesterday, and as unbelieveable as this is they are sending her home today. Yes, one day and your butt is out the door. She will be coming home with drains hanging out of her etc. darn those insurance companys! Luckily I am off so I will be able to be of some help to her.
My question is I would like to make her a nice easy warm egg custard. She is not the biggest eater to begin with (unlike me) and I think this would be perfect for her to get down even if she does not feel like eating. I honestly have not made a custard in a long while for lack of time in the cooking department. Can someone please help me out? I looked through the recipie section and maybe I missed something but did not see one.

I have no clue at all how to make custard; I am not a good cook...
However, I agree with your anger about how insurance companies are booting women right out the door after these operations. If you go to Lifetime TV's website, they are collecting signatures for a petition to support the reintroduction of the patient protection bill which would stop these things from happening. I encourage everyone to take a look and sign the petition at the very least!

An old-fashioned baked custard recipe made with eggs and milk
1 cup evaporated milk, undiluted
1 cup water
4 large egg yolks
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
fresh nutmeg or ground nutmeg
In a medium saucepan, combine milk and water; heat to scalding. Beat egg yolks slightly; add sugar, salt and vanilla. Gradually add hot milk to eggs, stirring constantly. Divide into 4 custard cups and set in a pan of hot water. Bake at 325° for 50 minutes, or until tip of knife comes out clean when inserted in custard. Sprinkle with ground nutmeg or grate fresh nutmeg over top of each custard. Serve warm or cold.
Serves 4.

,...or bake as a pie:

INGREDIENTS
1 (9 inch) unbaked pie crust
3 eggs, beaten
3/4 cup white sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 egg white
2 1/2 cups scalded milk
1/4 teaspoon ground nutmeg
3 drops yellow food coloring (optional)
DIRECTIONS
Line pie pan with pastry, and brush inside bottom and sides of shell with egg white to help prevent a soggy crust.

Preheat oven to 400 degrees F (205 degrees C). (I put my pie crust in at this point and half bake it >prick with fork>take out to cool while making the filling)

Mix together eggs, sugar, salt, and vanilla. Stir well. Blend in the scalded milk. For more yellow color, add few drops yellow food coloring.
Pour custard mixture into piecrust. Sprinkle with nutmeg.

Bake for 30 to 35 minutes, or until a knife inserted near center comes out clean. Cool on rack.

You might also think of getting a box of INSTANT tapioca at the grocery store... it usually has a very simple recipe for FLUFFY tapico pudding right on the box and it is DELICIOUS.

You girls are awsome, thanks so much. I did see the one with the Bisquick in the recipie section which sounds delicious but I think just a nice soft custard will go down easy for her. I am also going to make a big pan of meatballs and some nice rolls for the family. She has two sons, 17 & 7 plus the husband and there is no way this woman is going to be doing any cooking for awhile yet. Please everyone, go for your mammograms,,,this woman has an anxiety disorder which prevents her from many things including medical procedures. She never went for a mammogram which in this day and age is crazy. She was at her yearly physical and the doctor found a mass. The result was a double mascectomy. Thanks again all, custard is a nice comfort food and I am going to make some for me too.

AND chickbea,,,,I know the petition you are talking about as I have seen it. Can you imagine coming home like that in one day??? Not only the physical pain but the mental anguish as well??? I remember reading an article that said more than half of these early discharges end up back in the hospital in 1-2 days and usually by ambulance as laymen (family,friends) whith no medical background are not capable of caring for such serious situations. Sooooo,,,,what are they really saving.? I think it is terrible.
 
Bless you for doing what you can to ease her situation. My sister lost her battle to breast cancer, completely due to medical mishaps - wrong chemo, denial of important tests, wrong tests performed, etc. The stories I could tell! I will NEVER have an HMO after watching her situation. A specialist told me that my sister's cancer didn't have to take her life, that with the right treatment she would have been fine. Treatments have come a long way since my sister passed away in 2003, so learn about them and demand the best. Please, encourage your friend to be her best champion, and if her anxiety disorder keeps her from doing so, she needs to find someone who is willing to help her navigate the system. I'm hoping for all the best for her and for her family.

I also use Allrecipes.com for my go-to site, largely because other people have tried and rated the recipes before I attempt them. Custard is yummy and I'm sure that the love and care you put into it will warm your friend's heart. Hugs!

Backyard Buddies I will tell her what you said and am so sorry about your sister. I do not think I have ever heard a good thing about an HMO.
I and many friends talked her into going to Dana Farber Cancer Institute in Boston which is known all over the world. The little rinky dink hospital where she went for the initial test did not even do them right and when they did biopsies they took the wrong samples! You really have to be your own doctor today.

I also will check out allrecipes.com in the future.
