I candled the eggs to early

I candled the eggs at what I thought was day 10. I took out the infertile ones. Then the next day I looked at my calender and it said candle eggs on a date 3 days later than when I had candles them.

Do you think I could of thrown out eggs that were developing? I checked really well and it didn't look like there were any veins or anything. Now I feel guilty that I might have thrown out a developing chick.

Unless the shells are extremely dark, veining will be readily visible at day 10. Some candle far earlier than that. I doubt that you discarded any fertile eggs.

It is possible that they were starting to but by day 7 you should be able to see some veining.

Most times you can see the veining at 5 days, some at 4, if you candled 7 days in you would have seen development.
