It means to put them in the incubator after taking out the turning device and not to open it until they've all hatched and are fluffed out. At the very least, you should avoid opening the incubator if you see any external pips, but it can be really hard to be sure you aren't missing any.

Lockdown means put them there and don't touch them until they hatch or until two days overdue to hatch. Temperature variance and the temperament of mother nature can cause some eggs to develop slower than others; hence the extra time to ensure that you're not prematurely giving up on a 'late bloomer'.

It is a good practice to perform an eggcropsy for any eggs that do not hatch. Examining the contents of the unhatched egg and the stage of its development (or lack thereof) goes a long way to answering questions about 'what went wrong'. There is a really good guide on the forums with photographs on a day-by-day basis on what the egg development should look like, and also describes what the most likely cause of failure to hatch would be for the gestational period of time that the egg 'quit' developing. This would be a good read while you're waiting for your babies to hatch so that you'll be ready to perform an eggcropsy should the need arise.

Do the chicks need food one day after hatching?

They don't technically need it but it doesn't hurt to put some crumble on the ground so they can get used to eating it.
