Quail taste amazing, grow fast and are easy to process. Everything is
done in the sink and I don't even brine them although I need to try
soaking them in buttermilk. Usually I'll skin them, wrap them in bacon,
and put in my rotiserie. Baking is good too. We've even deep fried them.
I can literally go to the quail cages, grab 6, process and prep all in 20
minutes. Cook time varies but it doesn't take long.

Too bad you don't live closer PC. I have 5 ducks (yucks) and 3 roosters to process and I couldn't do it today because I'm waiting for Monday for DW to help me. We could have made a day of it today.

I'll put it on my list for quail. It's so simple though.

Grab a quail and a sharp pair of scissors. Chop the head off over your
garbage can. Scald in a small pot of water or just skin. Slice the back/
vent area and with one finger reach in and gut. Do all this in your sink.
Quick and no mess. Some people then remove the breasts and discard
the rest. I need to practice that part.

Start cooking.

Yeah man I wish we did live closer. We've had a bunch of processing
parties out here.

My DW and DS help but I find if I just do a few by myself they come out
fine.

My plucker is set up here too. It's been helping me a lot.

We processed 38 birds today!

Its nice and warm here in Louisiana. We were wearing shorts and t-shirts but it will turn cold tomorrow...which means highs in the 50's and lows 34ish.
