It gets easier. If a confirmed wuss like me can kill and butcher a chicken, anybody can. One thing to keep in mind is don't think about it. Just do it. Makes a big difference.

I killed my first chicken because I had to. It was a big fat Cornish X and it could no longer walk. DH and my brother, the usual chicken killers, were out of town and this big roaster simply wasn't going to make it until they got back. Faced with the choice of either putting that nice plump chicken in the oven or the dumpster, I opted for the oven. I managed to dispatch him with a pair of LARGE pruning shears without too much distress to either of us, and got him plucked and cleaned by following some step-by-step instructions I downloaded.

Now I do a lot of the chicken killing all by myself. I have replaced the pruning shears with a box knife now though. I cut the jugular so they bleed out really well. The knife is so sharp I don't think they even feel it.

I'm pretty sure he will be tough if you don't let him relax overnight in the fridge. I always skin mine. Much easier, plus I don't eat the skin anyway.

also, two things i have noticed: the skin just below the vent between the legs is very loose and theres lots of it, im assuming thats because he was only 4 mos or so old and he had a lot of growing left to do.....and then just about his tail its squishy and slimey is this normal? is that area those glands im suppose to cut out? i thought the tail was the glands?

Go onto the Meat Birds site. There is a posting, I think it is the first one, on butchering. It has pictures and everything. It will answer most of your questions.

I just whack the tail off. The oil gland is on the top of the tail.

I can empathize... but I think once you turn the chicken into soup or a roasted bird, you will suddenly think, mmmmm that smells good and I'm hungry now.
