I found this recipe on allrecipes.com and decided to give it a try. I always enjoy trying new things. This was really good but next time I make it I think I will cook it in a smaller dish so it will be thicker. The flavor and texture was wonderful. The center was moist and custard like and the edges were kind of crunchy. I will be making this one again for sure!!!

German Pancake

Ingredients
· 1/4 cup butter
· 1 cup all-purpose flour
· 2 teaspoons cinnamon
· 2 teaspoons vanilla
· 1/4 cup sugar
· 1 cup milk
· 6 eggs, lightly beaten
· 1/8 teaspoon salt

Directions
1. Preheat oven to 375°, melt butter in a 9x13-baking dish.
2. In a medium bowl, beat the eggs with the sugar, cinnamon, vanilla, salt and flour until smooth. Add the milk and mix well. Pour the mixture into the prepared baking dish.
3. Bake on center rack in the preheated oven for 25 to 30 minutes, until golden brown.

Did the edges rise up like that by itself or did you fold it over as it baked? Seems kind of bread pudding like, especially the edges. Now I want bread pudding.

The edges roll like that on their own...

The British do a savory version of this with roast beast, they call it Yorkshire Pudding. When they take their roast out of the oven they pour the savory batter into the pan that the dripping from the roast fell into and bake it in a very hot oven. It's extremely rich.

Yeah, there are quite a few different versions on this same theme. I've just never tried any of them before and I was surprised at how much I really enjoyed it.
