I live in The city of Jackson, and would like to get a couple chickens, just curious if I would be able to do such, being within city limits?.. Thanks in advance!

Welcome to BYC. Glad you decided join our flock. Poultry is allowed in Jackson, Michigan, but may not be kept within 100 feet of any dwelling or city street. Also they are not permitted to run free; they must be kept confined in runs or buildings (http://thecitychicken.com/chickenlaws.html).
