I need a really super good recipe for zuchini bread, anyone have one?

So, I bought some zuchini seeds, and I want to grow some. I don't really care for the taste of zuchini, but I LOVE LOVE LOVE zuchini bread. I just need a really good recipe for it! Anyone have good recipes?

Ill have to hunt my down for you.. Also if you like chocolatey zuchinni bread look up MissJaynes website... She has an awesome one there.. Oh and get her Cranberry Cherry Pie recipe aswell.. YUmmmy

I have a great recipe for zucchini bread at home. I think I sent it to Chickenchick at one time and she is at home now. Maybe I can get her to find it? Chickenchick...you there??
 
Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
3 tsp. vanilla
2 cups grated zucchini
3 cups sifted flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
1 cup chopped nuts (your chosing) optional
raisins (optional)


Pre heat oven to 325*

Beat eggs until fluffy. Add oil, sugar and vanilla. Fold in zucchini. Add dry ingredients and/or nuts and raisins. Pour in greased baking pan(s) Bake for 1 hour

I love the idea of pumpkin pie spice. Does anyone add cloves to theirs? Just wondering. I add it to my pumpkin bread and pumpkin cookies. Oh.... I LOVE pumpkin!
 
You can shredd your zuchinni and freeze in 2 cup batches. Defrost and dump into your bread mix. We always make 6 loaves at once then freeze it and thaw 20 minutes before slicing and serving cold.
 
My mom makes these awesome zuchinni brownies. I just texted her for the recipe. You can make them blondies or brownies actually. All kids seem to love them. I will post it as soon as she sends it.
 
Here it is:

Zuchinni Brownies

2 cups shredded zuchinni
1 1/4 cup granulated sugar
1/2 cup vegetable oil
2 tsp. vanilla
1/4 cup unsweetened cocoa powder
1/2 tsp. salt
2 cups flour
1/2 teaspoon baking soda
1/2 cup chopped nuts

Mix zuchinni, sugar, oil and vanilla in large bowl. In second bowl sift cocoa, salt, flour, and baking soda. Add dry ingredient to the zuchinni mixture. Stir in chopped nuts (optional). Bake 350 degrees for 30 minutes.

Variations:
Lower fat: use 1/4 cup applesauce and 1/4 cup vegetable oil
For Blondies: emit cocoa powder and add 2 tbsp additional flour
