I need a yeast roll recipe

Ok, my mom's roll recipe:

11 oz warm water
1 tsp salt
3 tbsp softened but not melted stick butter
1 beaten egg
4 c. bread flour
4 tbsp sugar
3 tsp rapid rise yeast ( I use the jar instead of packets since I use it often. not sure how to convert it to packets)

Bread machine instructions:
Add first 5 ingredients in order into bread machine pan. Make a well in the flour and add the sugar and yeast. Use dough setting on bread machine. After cycle is finished, spray large bowl with cooking spray and add the dough.
With well oiled hands. form rolls ( just kinda press out the air bubbles, kinda squish it flat) and place on greased or buttered baking sheet. Cover and let rise to desired size ( I believe the longer you let it rise, its less dense since there are more air bubbles, but don't hold me to that). Bake at 350 degrees until golden brown, about 15 minutes. Remove from oven and butter the tops.
Glass or dark pans will cause rolls to brown faster whereas a lighter pan will require longer baking time.
Serve warm with honey butter.

Non-bread machine instructions:

Mix the water with the yeast until dissolved. Mix the dissolved yeast mixture with other ingredients and mix well. You may need to use a little more flour if the dough is really sticky. Place in a well greased bowl and let rise in warm place for around an hour. Then follow instructions above for forming rolls and baking.( I haven't tried it this way so I am not sure if it works as well, I do the dough in my bread machine)

* I like to add a little more sugar to make them even sweeter. I use one of the Baker's Secret sheet pans from walmart and I can get 12 good sized rolls on one of those. I used this recipe to make pigs-in-a-blanket yesterday and they were really good! I am sure you could just bake loaves and would work just as well too.

Good luck with whichever recipe you try!

I don't have a bread machine.....Would I just mix ingredients and allow to rise?

Do you have a stand mixer like a Kitchen Aid? If so you could mix them in there...you could try it by hand but it would be very sticky and you can't add any extra flour or they wouldn't be as light and fluffy.

I would ask for a bread machine for Christmas if I were you...they pay for themselves in a very short time. I've worn out 2 and waiting for the delivery of my 3rd one. We haven't eaten store bought bread in years.

the thing about a bread machine is I'd be baking bread all the time and I'd eat it!!!

Lord know I don't need to do that!
