We started growing collard greens in the hoop house for an agriculture class of mine and we harvested some of the first leaves the other day! So I whipped up some collard greens (Without turkey or bacon because I didn't have any!) and they were delicious! I had to add green beans because I didn't quite have enough collards. So yesterday I went to a a huge produce store and they had HUGE collards for $2 per two bunches. I picked two bunches up and added mushrooms this time. Oh my word, they are simply delicious! I have so much left over, but not for long because I can't stop eating it!

I made garlic mashed taters last night with the collards and drizzled the collard juice all over them. Delicious! The night before I made cous cous with beans and mixed the collards with that. The collards have a little bit of spice and it goes perfect with anything it seems! I would love to make some dijon crusted chicken next time to go with them!

What is your favorite food?
 
Collards are GOOD! The thing is, it's not something like spinach or chard that benefits from quick cooking. With collards, you want to simmer them for 15 minutes at least, to bring the flavor in the stems out.

I LOVE southern food. I always say I should have been born in the south. Between southwestern food and good ol' southern food, I'm in love every time I visit!
 
Now next time make some cornbread in a cast iron skillet. Put you a big ol' hunk of cornbread in a bowl with lots of butter and heap on some collards and some pot liquor, that would be the yummy juice. MMMM, heaven in a bowl!
 
Hi Chickerdoodle! You're making me salivate! My favorite vegetables are spinach and kale so I guess I need to try collard greens! Otherwise I'm a chocoholic...
