I think I have a new favorite food!

X MIL used to cook the collards with some ham juice Then fry some bacon and then stick the collards in the pan with the grease. Kind of like refried collards. But man-oh-man.....can you say high cholesterol! But I will die with a smile and collards on my lips!
 
I love Collards and I grew up around Boston. I cook them in the pressure cooker with or without ham hock but HAVE to add just a little crushed red pepper and sprinkled with vinegar!
