PROGRESS UPDATE!!

So, the bagels are mixed, kneaded & resting. I should add that my "stand mixer" consists of my standing at the counter & mixing stuff by hand.

That'll keep me out of the fridge.

Gotta see if I've got enough flour to make a double batch of pizza dough (why bother with one?). Ham stock is nearly done & ready for the split peas. Gotta wait for all the meat to finish falling off the bone, whirl it with my wonder stick, then "pea" in it.

My grandmother would be so embarassed if she knew I just said that.

Oatmeal Cake

1 cup old fashioned oats
1/2 cup butter, soft
1 cup sugar
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
1 1/3 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

Topping:
1/4 cup butter
1/4 cup heavy cream
1 cup packed brown sugar
1 cup shredded sweetened coconut

1. Preheat oven to 350 - grease and flour a 13x9 cake pan

2. To prepare cake, pour 1 1/4 cups boiling water over oats in a bowl. Let stand 20 minutes. Cream butter and sugars with a mixer. Add oats; mix well. Add eggs and vanilla; mix well.

3. Stir together flour, baking soda, salt and cinnamon. Add to oat mixture; mix well. Pour into pan. Bake 30-35 minutes until brown.

4. Preheat broiler.

5. To prepare topping: combine all ingred. in a medium bowl; mix well. Spread evenly over warm cake. Place cake under broiler 2 inches from heat source. Broil until lightly browned (1 - 2 minutes). Cool on a wire rack.

ENJOY!!!
 
Oh YUM! That sounds fabulous! I have a gas stove, so the broiler is not an option- but that way, I can bring in my favorite toy, the torch! YEEHAA!

Thanks for posting the recipe, we love anything oatmeal, but I had never heard of an Oatmeal Cake. I'll be trying this very soon.

I did duck egg belgian waffles (will post later)
2 loaves of gump bread
2 loaves of my italian twist gump bread

and have pork tenderloinfor later.

That, and a couple of new muffins tins, is all we really need household-wise!

More progress: bagels are nearly ready to get boiled, pulled the first batch of canned soup off the stovetop, pureeed the ham stock and "pea-ed" in it, and prepped the chicken. You guys are not good for me. All these good recipes and yummy baking, I am going to have to get some bigger jeans! I have pizza crust rising right now for dinner. oink oink!

I've been fiending for homemade bagels ever since Jayne posted the recipe that she'd made a while back. I have a feeling I'm ruined for store-bought bagels now. That's the problem with making stuff at home. I can't stand store-bought marshmallows anymore, either.

The
first batch of 6 bagels is in the oven. When the 2nd batch comes out in about an hour I'll put the chicken in to roast. I'm almost ready to can that split pea soup now, too!

Haven't started the pizza dough. Once the second batch of bagels goes in I'll start it. Need a rest!!
