What is the best breed of chicken that is small, but also a good layer?

I don't need an egg every day, maybe every other day? I was thinking about getting a few hens. (I'm the only one in the house that eats eggs...)

If you like little eggs, you could get bantam chickens.
I know there are bantam Wyandottes, perhaps there are bantam Rhode Island Reds. Those are good laying breeds.

My next-door neighbors have a Sultan, and she lays small eggs, she's quiet and she's adorable. She only lays about two or three a week, but if you had two, that would probably be plenty.

I love our Easter Eggers. They are small for a full size chicken, lay beautiful medium green eggs and are friendly. JMO Good luck on your choice!
*edited to add I forgot to mention ours lay about 4-5 week consistently.

If you don't mind small, white , and flighty try Hamburgs. They are beautiful and if can give them free range they are relatively self sufficient.

I have two bantam RIR and they are consistnet layers and good broodies. My OEGB is my best layer, except in this heat.

Get two or three Leghorns. The standard breed isn't very big. But only get a few if you're the only one who eats eggs; Leghorns lay very consistently.
