Ideal pair?

So I have 3 Seremas. Started off with 2, one passed on, got another trio, one was killed by new pup (>,< luckily we have some eggs from her in the bator) so I have 2 Roos, 1 hen.
1 roo is going to be a Cochin hen, she's really sweet and passive, and the other will be with the hen.
My question is, who should I pair with the hen?

Rooster (currently with Cochin hen)

One with Serema hen

I would use the roo with the best type. I can't really tell from those photos, which one has the best type though? Sorry!
