If you could only use ONE knife, what would your favorite be?

Not what I use for butchering, but my favorite knife is my Shun chef's knife.

My favorite would be a fillet knife made by Hammer Stahl. I can use it on deer or chicken one day and in the kitchen the next with no sharpness issues. It also has one of the best warranties out there..

The only thing to be wary of is that if you mess up even a little bit you WILL cut yourself with as sharp as the knife comes.​
