This would be great for 4-H projects as well. Maybe make it so it can be used for chickens/ducks/guineas/etc. Then easily printed out (my kids hate writing).

Printing is the part that is stumping me. What I was thinking about doing is the ability to save reports in the .odf format, which can be easily opened by Microsoft Word or any word processor and printed from there. Do you think this would be to much work for you?

I agree with a previous poster about having something for incubation and hatching as well. With maybe stage developments in for incubation and developing from day 1, type of thing.
