Long ago I did health department inspections at a few small sausage plants, and their procedures were terrific! Quality meats, handled correctly, went into everything. Absolutely no issues seen, and our inspections were unscheduled.

I’m so old, I remember when: I used to watch “Emergency” on TV at 8pm on Saturday nights and tell my parents “I want to do that when I grow up”. I was 7 or 8 at the time. I retired after 30 years as a paramedic in 2018. Fantastic career, however wouldn’t recommend for physical reasons.
