it would mean opening up the incubator every time (temp and humidity drop quite a bit when I do this) would it be better for the temp and humidity to drop rather than not turning the normal ones?

Hand turning them shouldn't take that long to do so the slight temp/humidity drop in the early stages shouldn't affect them.
