Please help! This little bit hatched on its own in about an hour. Foot was in in absorbed yolk. Most of yolk seems to have leaked away and now looks like intestines and innards. What should I do? This is my first baby to hatch.

I have the ice water the one with the probe thing is showing 7.1C witch is 44.78 degrees Fahrenheit but it does not show how to calibrate it

Something's definitely wrong! I'd try a different thermometer; the one you're using ain't even close. Did you fold the baggie over the probe, like a sandwich, or is the probe just laying on top of the baggie?
