Ok I have the probe one at 3.0 CELSIUS FINALY That's the lowest I could get it.and I got the other too exactly 32 degrees Fahrenheit

I think I see what's going on the Baggie is to protect the thermometer great idea. Now after leaving the thermometer in the ice water for the required time the temperature on the thermostat is checked against 32*. If it reads 32* on thermostat you do nothing and you've found a very good thermostat protect it with your life. Now if it reads 34* subtract 32* from 34* and you get 2* for your calibration number. Every time you use that thermostat subtract 2* from what it reads and you will get the actual reading in your incubator. You can not get a thermostat to read 32* if it's not accurate and most won't let you change them in any way. This is oversimplified because the ice water temperature is a variable we can't really control but it will get you close. I write the calculation on each thermostat as each one is different
