I can kind of see coq au vin being a special treat/event meal - in a usual smaller flock, retirement of an older rooster would be an uncommon event.

(My 7 month old attack rooster that I processed a couple weeks ago was indeed delicious. The thighs were REALLY dark and a bit chewy even after a long rest in brine, so I cut the meat into little pieces and mixed with rice and Indian spices. SO flavorful...)

Yeah, I usually keep anywhere from 2 to 10 from each hatch - depending on how many chicks hatch. The obvious defects early on send them to the grow out area and then to a pre processing housing. When I have several really nice ones, it takes me forever to decide which to cull.

I'm pretty good at cooking a rooster under a year whole. But it is better to part them out so the legs and thighs can be cooked differently.

6 week old Cornish X have very little flavor. You can make them taste however you want. A mature cockerel/rooster is chock full of flavor.
 
I was shocked to find the same thing this morning, MC. :eek: I guess it's that time of year to switch to strong Lipton iced tea in the mornings for me. (It happens. Usually when it starts getting into the 90s...)

I used to be grumpy about having no one to help - I have to do everything myself as well. (I DO still rail at instructions for things that say that you need two people...) But I got used to it. I also realized that I have become ornery and opinionated and stubborn enough that if anyone was around to help me, by the time we were halfway through, they would get tired of me bossing them around and go find something else to do... :confused:

My annoyance comes from my husband booby trapping the garage, then walking out on me. I can't move the SUV with a dead battery and four flat tires by myself. I also can't move the stuff that is packed around it, because it is too heavy. My 400 pound husband could still do military push-ups one right after the other! No way I'm that strong! So, it will take my husband or about three other bikers to help. At this time, all the bikers are off limits because I can't tell them why he's not around. Not to mention that I don't know anyone's number.

What is MCC.

My son is studying actuarial science but has been cooking a long time. Welsh, Italian, Mexican Soul Food, Vietnamese Vegetarian, banquet food, steaks, hotel kitchen. I forgot what else he has cooked.
Referencing the discussion of working outside without any help, even though he has helped me on some big projects, I don't really feel I can ask for his help.
He works 2 full time jobs. During the day he works at the same Welsh restaurant where he used to be kitchen manager. At night he works at a busy modern casual and wine club. Yesterday they had 1200 reservations and grossed $40,000. He said it was mayhem. He still looked pretty fatigued when he left for work this morning.

I can imagine. Mink are tiny mean critters. I'm glad we don't have fishers. Badgers are supposed to be across the state of Missouri but I've never seen one. Distribution is sparse.

Sweeeet.

How many days in the new Mayan calendar? Or has anyone bothered to make one?

I don't know what a MCC is… Nothing good!

25 eggs have arrived with no cracks! Some have slight saddles, one has a pretty bad saddle, (almost detached) but overall they look pretty great! :weee

@casportpony do you have any information on a product called cocci rid, distributed by Thomas laboratories. It was the only thing my local feed store had rated for poultry.
It is 2.5% amprolium so should work like powdered corid except that the corid powder is 20% so the amounts would have to be adjusted accordingly.

Since he's gone, you could have a sale and sell off all the stuff that is in the way.

The only reason I could think of for older roosters would be the amount of meat. Does he want older roosters or just any age? 20 is a lot either way.

Holy moly - I'm not sure what your setup is like, but with my limited experience with just a few roosters, I would think that that many year old roosters would take a lot of feed and a lot of housing (and, depending on the former, maybe a lot of rooster first aid). How do you do it?! (And what do you charge?!)

Most of my chickens are just mutt ranch chickens that I don't breed on purpose, but quite a few will sneak off and nest in the bushes. When they hatch I try to sell the hen with the chicks for $20. Have four or five sets like this right now. Sometimes no one is buying, so they end up being fed then sold. The local feed store will "take" my unwanted chicks, but I don't get any money for them. Once bigger, the store will give me $5 each. Roosters sold here are priced depending on size - $5 for smalls, $10 for medium, $15 for large.

When I get a rooster call I will go catch as many as I can and put them in the sale pen. Not sure how many I have right now, but doubt I can get 20 for him.

Feed, yes, lots of feed. Not making a dime on anything here.

Housing - they free range. Since they free range, they don't really fight.
