i was planning the same thing with a few roosI'm thinking of trying that this next year. I am going to practice on some butchered roos first so I can do it quickly and cleanly. If I get good at it then perhaps I can make capons and when they are healed sell them to someone who wants to grow them out for the gormet (sp?) restaurant business. I am going to be hatching so that could be a good way to market the extra roos. Not many people want to try it.

The one closest to you fingers is a double yolker!I have been lamenting that I might not get eggs until spring. I have been so busy getting ready for my daughters visit that I didn't even check the last 4 or 5 days. But this evening I heard one of the girls singing the egg song so I went and looked and this is what I found.
I am so thrilled! Look at the size of these pullet eggs! These guys came from Bev Mellili in Portland TN.
