Geese and Ducks have more grease than chicken. As it is cooking, you will need to pour off the oil that collects in the bottom of the pan. That exhausts my knowledge on the subject. Thanks for the input! My second customer finally emailed me back and was praising me on how well I did on packing and this was the first set of eggs they received in the last two months that weren't broken! They were very appreciative of my offer and already sent me the money for shipping even though I wouldn't be able to get the eggs out for another week or so. Customers like them make it all worth it!
Connie- I can't help you either! Never had goose or even duck!
I would of done what you did. Offer them more for the cost of shipping. That is the most anyone could expect. You just can't make some people happy no matter what you do. They know it is a gamble. I've recieved a lot of shipped eggs through the years, and have had many , where none even developed( actually 16 shipments just last year ) and never once, complained, I knew the chance I took.Got a question for everyone regarding shipped eggs. I'd like to get perspective of what you would expect from both the seller's and buyer's point of view.
If you purchased eggs from a seller and shipping ended up taking 7 days to get to you instead of the 2 days USPS stated, would you expect the seller to compensate and if so, what should they offer.
If you were the seller and the shipment took the 7 days to get there instead of the 2, would you offer anything to the buyer and if so what would you offer?
Obviously I'm asking as I am in this pickle as we speak. In my ad, I explained shipped eggs has its risks and I can not be liable for hatch rates due to shipping and incubation issues. Well 2 egg shipments went out last Saturday, expecting them to be delivered on Monday and Tuesday per USPS. Well as of this morning, only one is expected to be delivered today, the other looks like it will be delivered on Monday.
One seller has emailed worried about fertility and frozen eggs, both valid concerns. The other seller has never replied to any of my messages. I honestly don't feel I have to compensate in any way, but before they asked, I offered to reship the 10+ eggs for the cost of shipping and I would add a 72 hr heat pack at no additional cost. I charged $15 for shipping ($10 for shipping, and the rest to cover packing materials, time, and gas to PO). They came back and want me to pay for half the shipping! I double checked shipping price and explained that I'm trying to be far to both of us and ultimately said I would reship for $10.50, that I'd pay half the shipping but they would have to pay for heat pack if they wanted it.
I trying to put myself in their shoes as I know how disappointing it is to get bad eggs, but I also don't want to get taken advantage of. I also contacted my other customer telling them I'd replace their eggs as well for the cost of shipping, but they haven't replied back.
Just curious as to what the others expect if they were in both our places.
I agree with LAM. You have more than held up your end of the deal.I would of done what you did. Offer them more for the cost of shipping. That is the most anyone could expect. You just can't make some people happy no matter what you do. They know it is a gamble. I've recieved a lot of shipped eggs through the years, and have had many , where none even developed( actually 16 shipments just last year ) and never once, complained, I knew the chance I took.
We've done a couple Christmas geese. May do another this year. We have always bought ours through Goose The Market in Indy. I don't know of anyone who is currently raising geese to sell.Okay...have two questions for all of you on here....
#1: Does anyone have geese they are going to butcher around Christmas? I would like a small to medium sized bird for my family. Please PM me if you will have one or if you know where I can get one!
#2: How do you cook a goose exactly? I mean I know how but what does everyone recommend?
I've not ever cooked a goose and my brother has never even had it so I am taking on the challenge of cooking a traditional Christmas dinner.
