That's a wierd looking gizmo! The thing we found the hardest about cracking the eggs was that the membrane is a lot tougher to break through than chicken eggs -- almost had to pinch it open (also found this to be true with the duck eggs, but they're bigger to hang on to!) We always cracked our eggs into a separate bowl because we inevitably would get a little piece of shell in with the egg & would need to fish it out before adding the egg to whatever we were making.
